Dad's not home tonight so we decided after picking wild blueberries from the yard we should make them into pancakes for supper. I LOVE breakfast for dinner!! This is our favorite recipe because it makes enough for the whole family without doubling it and they come out light and fluffy if you remember the baking soda (I forgot it the last time I made them for breakfast, the kids still ate them but not in seconds and thirds like usual. Then I took the first bite of mine and realized why!)
Kelley Favorite Pancakes
2 1/4 cups flour
1/4 cup sugar
2 1/2 tsp. baking powder
1 tsp. baking soda
3/4 tsp. salt
2 eggs
2 cups buttermilk or sour milk (to make sour milk add 1 tablespoon of vinegar or lemon juice to every one cup of milk the recipe calls for)
1/4 cup oil
1 tsp. vanilla
Combine the dry ingrediants in a large bowl and whisk. Then in a small bowl whisk the eggs, buttermilk, oil and vanilla. Add the wet to the dry and mix well. We use 1/4 cup of batter for each pancake and it makes about 20.
